Need help with incubation!

Will having water bottles in there change the temperature?

The temperature is usually very stable no matter how many eggs you have in there. I kept my humidity between 55 and 63 and had no trouble. At lock down I cranked it up from 73 to 78 and had a 86% success rate for my first time incubating. Had 22 eggs of which 19 came out so I was quite happy with that. My one hen sat on 8 eggs and only hatched 2 chicks.

Water bottles stabilize the temperature. Bottles won’t fit in that incubator but water filled sandwich bags will.

I use water bottles when setting up an incubator for a source of thermal mass. It helps with temp regulation. If my bator is not full of eggs, I leave some bottles in to help stabalize temp and hold extra heat in case of power outage.

I have 1 bag of water in there should I add a second?

That's entirely your call! Just be sure those bags can't leak.
