I have 8 hens. They should be laying in about 3 weeks. How many laying boxes do I need?

2 or 3 boxes will do for your flock. More the better in case you get some broody birds in the future. I have 1 box per 2 hens as sometimes you will have lots of waiting lines with 1 box per 4 birds, which tends to the standard amount of boxes.
