So what happens if we go back to edit but there've been 300 posts since then (1 day) and you're not sure if you've got someone else's date/time? What happens if there are two with the same answer when the bidding stops?

We've never had it be a problem where two winning posts were the same exact time and date... and the probability of it happening is pretty rare. If for some reason that actually happened, we'd go with the person that posted the date / time first.
