Yep, that I was aware of. Like any meat it needs to "age" to be edible. I did not think that applied to chickens, until a week ago when I butchered one at around 4 Pm and had him on the table for my wife at 5:30.
It was so tough and horrible. BUT I still managed to make good chicken noodle soup with it by dicing it into small pieces and simmering for hours.
I refuse to let anything I kill go to waste.
