Quality of fermented feed after it dries

I have started my new chicks on organic chick starter that has been fermented. I notice they don't care for it while it's moist...to the point of shaking their head after pecking at it. Once it dries they are all over it. Is the feed as nutritious after it has dried under the heat lamp? I am very familiar with fermenting for myself after having done it for 25 years or so, but everything I've ever made is a wet ferment. Any wisdom on this?
 
Mine were like this for the first day and then they ate it like crazy. In fact, now when I go in to feed in the AM they swarm me. I do drain some of the water out for a few minutes so that it's moist buy not like slop.
