Just processed my first two meaties. One had a really red wing. Is it still edible? What would have caused that? She was handled gently. Dispatching took longer then the first one as the cut was not deep... Felt really bad about that. Kept apologizing to her:(
 
I only processed one bird and he died in the middle of the night. He was really hard to bleed out and it ended up not working. His meat had a lot of blood settled in it so I ended up putting it in the bait for hunting freezer. That may be the case in yours. But another thing that can happen is necrosis, which will make the meat hard, but usually that's green I think. I don't know if I would eat it, even cooking it well.
