I’m looking to show chickens and I’m trying to figure out what pen setup I would need so that the birds are in good condition for showing.

I would highly suggest getting a much much larger than needed coop and run area for your birds that you want to show. Fights will happen and they will peck at each other, but a much larger space will help them greatly. To have a perfect show bird with zero feather damage is practically impossible as they are living animals.
