Good how old does the hen have to be before starting to lay?

She should start laying this spring. I am located in Wyoming and my hens tend to start laying the last week of March.

Is it better to let the turkey's hatch the eggs there self or to incubate?

When I have sufficient eggs in the incubator, I let the hens hatch a clutch of eggs. They are better at hatching eggs than an incubator is. I will even give turkey eggs to broody chicken hens to hatch. I do take the poults away from the hens once they are hatched. I get a 100% survival rate putting the poults in the brooder. There are just too many things that can go wrong causing the loss of poults if left with the hen to raise. Once the poults are older and doing well, I do return a few of them to the hens to raise.
