In a 10-12" oven safe skillet, sauté 1/4 medium onion (diced) with 2 potatoes (cubed) until potatoes are lightly browned, add some cooked ham 1/2 cup, 1 diced tomato, fresh parsley & basil to taste, pour 6-8 beaten eggs over everything, salt & pepper to taste, pop covered skillet in the oven @ 400º for 20 min., top with 1/4-1/2 cup cheddar cheese, pop back in the oven uncovered for 10 min. Cleanup is only the pan, a spatula, a fork & a plate. Unless one is sociable, then there's more plates & forks.Yum! Do you just layer it in the frypan?

I'm going to use some to make my husband a birthday cake, maybe even an egg cream filling
