What did you use your eggs for today??

Yum! Do you just layer it in the frypan?
In a 10-12" oven safe skillet, sauté 1/4 medium onion (diced) with 2 potatoes (cubed) until potatoes are lightly browned, add some cooked ham 1/2 cup, 1 diced tomato, fresh parsley & basil to taste, pour 6-8 beaten eggs over everything, salt & pepper to taste, pop covered skillet in the oven @ 400º for 20 min., top with 1/4-1/2 cup cheddar cheese, pop back in the oven uncovered for 10 min. Cleanup is only the pan, a spatula, a fork & a plate. Unless one is sociable, then there's more plates & forks.

That is a great idea! I'm always trying to save on washing up
 
Made some fantastic turkey salad. Pressure cooked a brined turkey breast, added chopped onion, boiled eggs, celery seeds, a fresh gypsy pepper & mayo. Lots of chipolte powder. Really good!
 
cream puffs/eclairs with assorted fillings (chocolate and vanilla pudding, ice cream)
1 cup water in saucepan with 1 stick butter---boil
stir in until blended 1 cup flour when dough has formed off sides of pan, take off heat and vigorously whisk 4 eggs into dough--keep whisking until shiny sticky batter is formed.
scoop mounds of any size or pipe logs onto ungreased cookie sheet. Bake at 400 degrees F for 40 minutes or until puffs are not moist on top. Easy and impressive treat--uses lots of eggs
(If you add spices like thyme or rosemary to dough you can fill the puffs with stuffing, or roasted veggies for a savory side dish)
 
Sweet potato egg cups!!! Shred 2 raw peeled sweet potatoes and put a good amount in the cup of a greased 12 cup muffin pan. Crack 1 egg into each cup over the sweet potato sprinkle with salt and pepper and bake at 325' for 20 minutes!
