What is the best butcher weight for the rock x's?

I have twenty five corn/rocks that are almost 7 weeks old. Last night I weighed a few and I had 6 that were 6 pounds. What is a good target weight? Will a 6 pound bird, on-the hoof, so to speak - yield a 5 pound carcass? I'm used to processing Buckeyes and large body birds.

In general Cornish Cross dress out at about 72% of live weight. So, I would wait until the birds are about 7 pounds to butcher them if you want a 5lb carcass.
