No, the beets need to be either canned beets or cooked beets. I use fresh beets which means I boil the beets until fork tender so I can "wipe off" the skins. Then I use the brine to pickle the beets and can them pickled. When I want pickled eggs, I take a quart of pickled beets, split it into two quart jars, add the hard boiled eggs and enough more brine to fill both jars up. I like my pickled eggs and the pickled beets.Just to be sure I have this... You put the peeled hard boiled eggs and RAW beets in the brine?
