Which breed to choose and when to get them?

I am new to raising chickens and we don't know anything about different breeds.

We are wanting to get chickens for their eggs, mainly. The other advantage will be they can get table scraps and can put back out to the garden. Any ideas on which breed(s) would be best for this? What time of year would be the best to get them? We live in central Tennessee.

The best breeds for laying eggs are any Meditranean breeds (like the Leghorn, Andalusian, Minorca, White Face Black Spanish.) Most breeds in this class are flighty (wild) and this is where dual purpose breeds like the Americans work (Java, Lamona, Plymouth Rocks, and Dominiques) Also birds like the Orphington, Sex Links (Red, Golden, Black) and Americauna's. If you have no idea what some of these birds are look them up online or go to your local feed store and find a breed book.
