What does this mean? You need two birds to breed them, one would need a white gene.

No, in my flocks I get some pure White keets from Pied X Pied breedings, and some from pure White X Pied breedings as well. White X White will of course give you ALL White keets tho.

Pied X Colored will produce 50% Pied and 50% Colored keets
Pied X Pied will produce 50% Pied keets, 25% White keets and 25% Colored
keets
White X Colored will produce 100% Pied keets
White X Pied will produce 50% White keets and 50% Pied keets
White X White will produce 100% White keets

Whittni... in Guinea Fowl a pure White bird bred to any other color (except a Pied) results in only Pied keets.
