We had a soft egg very much like what you described. It was a normal sized shell-less egg, but it was encased in a long tubular membrane that looked like sausage casing about 4-5 inches long. When we opened the egg, the white was very watery. We fried it up for the dogs anyway.

How are you collecting it? If you have a rain barrel that catches water from the downspouts, I'd be concerned if you have asphalt shingles. I hear that toxins can leach out into the water. If you have concrete, tile, or metal roofing or are collecting the rainwater some other way then no problem.
