The diet you have her on sounds excellent. You could also give her some scrambled egg yolks if you think it'd be good. Maybe a small amount of greens such as broccoli, too?

With open-mouth breathing, chickens sometimes do that when they're just too hot, as well as if they have stuffy noses or gapeworms, or just took a sloppy drink of water.
