2 new ducklings and a lot of questions-advice needed

Hi everyone.
Long story short, we have 2 ducklings my FI brought home on Friday. They are being housed with our small chick (a golden laced wyandotte) who our chickens were beating up. The other chickens are now out in a coop and these three are in our garage under the heat lamp.

Anyway, I had a few questions.
1. They are on Southern States Chick Starter as recommended by SS. I threw out the bag, so I am not sure what the niacin level is to see if it exceeds the chicken NRC and thus is high enough for ducklings. I will call today, but if not, Ill add brewers yeast-do you just top dress it? I assume it wont hurt the chick since its a water soluble vitamin and toxicity level should be pretty high.

2. How do you keep them from playing in their waterer? I have the mason jar dish type and they drink then play and flood the shavings. Then they are out of water until I get home. Is it safe for me to put a small thing fo water (I was thinking a foil baking dish) to let them play in to keep them out of the waterer? The chick is 4 weeks old, so I am not worried about her drowning.

3. Is there anyway to tell what breed or sex they are?
