So I bought both of these thinking I was buying two sapphire hens as she told me. But now I'm thinking I either have a rooster and hen or a different breed all together.

Never heard of a sapphire. They do look like some sort of production birds, and it does appear they are two different genders.

They might be two different breeds, one might be a leghorn and one a sapphire. Is one a much brighter white than the other?

Yes the one with no red comb is more cream. The ones with bright red combs are pure white. So didn't know if maybe she gave me a leghorn instead of a sapphire

The one on left looks a lot like my white Plymouth Rock too.

agree with the experts. Right looks like a roo because of red developed comb.

These are pictures of two younger leghorns. You can see that they have rather developed combs for hens, but they are not extremely bright red. Also the fact that they are two different colors might be a hint that they are different breeds but its not definitive. Are their tails totally different shapes? In the picture they look small and rather similar which could possibly make me question that they are two different genders, and both females. Also from what i can gather, the sapphire comb looks much different than the comb of either one of those. That would lead me to believe that they are two different breeds all together. I would guess leghorn I agree with @Lincityfarmette on the white Plymouth rock. As far as gender, you will probably just have to wait and see. I have had young leghorns with very developed, dark combs before turn out to be a female, so that part is kinda left to chance.
