I have a buff orpington rooster but hens are amerauna and wyandottes. If breed and hatched, what would the chicks be called or would that affect the color of eggs produced by offspring? Thanks so much for feedback.

Chicks would be mixes, sometimes called barnyard mixes. Egg color with the Wyandotte wouldn't be affected much but the progeny with the Ameraucana would lay a minty green egg.

Thanks. Looking at selling eggs so wondered if I should get rooster that matches hens.

Depends on your goal. If you want to sell eating eggs it probably wouldn't matter. Customers seem to enjoy a mixed and colorful egg carton, but if you want to sell hatching eggs or chicks, then being able to offer purebreds might be the way to go.
