What kind of sweet treats do YOU make for Christmas?

I love Christmas! It's the special time of year when me and mom make lots of sweet treats, cook together, and decorate the tree together. To be honest, cooking and baking make life seem so simple, not like a rat race. It brings me back to a simpler time that I never got to see, but I can image from the stories mom tells me about her great grandparents old fashioned farm while we cook. Sometimes, I wish I could have cooked on a wood-fire stove!

I just got done cutting our 2 batch old-fashioned potato candy. It is SO good! And it turned out just perfect. This past weekend we made coconut bonbons and chocolate covered pretzels. Tomorrow we bake the sugar cookies, and then closer to Christmas we will make our Cherries-in-the-Snow to enjoy Christmas Eve.


So what kind of sweet treats do you guys make for Christmas? Is it symbolic for you, or have any special meanings/memories?
 
Since I no longer celebrate Christmas, there are no treats specific to that holiday that I make now. However, when I was growing up, my Mom would sometimes make a cream-puff tree at Christmas time. The cream would be mint flavored and it was always something very special and we didn't have it every year. The other thing I always looked forward to a Christmas was spritz cookies. Still one of my favorite cookies!

Does anyone remember those little mint ice creams in the shape of Christmas trees the grocery stores used to sell at Christmas time? I loved those!
 
We usually make about 20 pound of peanut brittle, to give as gifts, hard candy, fudge and cookies...thinking 'bout making some butterscotch candies this year...

I make lots and lots of peanut butter fudge and send it to friends and family, take it to work, etc. This year just made some caramel corn (stuffing my face as I type). Usually make popcorn balls, rice krispie bars, chex mix (cereal only). We'll see what I get done. When my brother's in town I make seafoam (divinity with brown sugar) for him.

I remember the mint ice cream christmas trees...yummy! May have to grab some of those!
