These were sold as mixed bantams - any idea what breeds?

They are mixes. The first one looks like it could be mixed with Olive Egger, and the second one looks like it could be mixed with Easter Egger. Keep in mind that Olive Eggers and Easter Eggers are mixed breeds themselves.
When two Ameraucana of different colors mix and produce a color not recognized officially it's considered an Easter Egger. It's a slang term that can refer to both pure and mixed breeds

Easter Egger is not a slang term for an Ameraucana. The term "Easter Egger" is given to any chicken who has a least one Ameraucana parent in their lineage, and they must carry either the blue, green or pink egg gene. Easter Eggers that are sold in feed stores are also called "Americanas" (not spelled the same as "Ameraucana") in order to trick buyers into thinking they are getting the real Ameraucanas. Since Easter Eggers are mixed breeds, they have no recognized appearance so they can look like anything.

I wouldn't call the offspring of a black Ameraucana and a buff Ameraucana "mixed breed" but they are called Easter Eggers

No matter what you say, you will never come across as true because that is simply not correct. I don't want to argue about something that is obvious. If you mix chickens with different colors, but they are still in the same breed, then they will be that same breed-just not with the correct colors.
