it depends on the gut state of the particular chicken, no? sure, a strong gut will not let gluten through (perhaps some peptides derived from gluten, which may have some activity). An inflamed gut will let gluten through. Same for lectins and protease inhibitors, which may be what many people are sensitive to. I think one should even ask the seller if the feed is fermented or not, only proper fermentation avoids those toxins completely.
