Cross Breeding

Hello - is it o.k. to breed a dorking rooster with a red hen (I think she is a new hampshire red?)

Sure - it shouldn't hurt anything! People cross breeds all the time.

My entire flock is "Mutts" and I like it that way, all dual purpose breeds, I've blended in Jersey Giant for size, Austrolopes for egg production and Easter Eggers for color. My egg cartons are quite a mix of colors.

I would suspect that "mutt" chickens would probably be better behaved and less erratic than most of the pure breeds. I say go for it.
