For those selling eggs...

Ideally I never wash... the house should be clean enough... as should the chickens bums.... washing destroys the film nature coats each egg with.... poo on eggs = a problem.
Any poo contaminated ones I tend to keep for us and I wash immediately before we use.... but to be honest they are few and far between.
We keep ours in a cold pantry & they sell faster than I can store - so storage not an issue here.

I wash under very warm running water, air dry, put in cartons and refrigerate.
I date carton when full. 20180723_182352.jpg
Non-Perfect eggs go in my carton. 20180723_182311.jpg GC

Clean eggs do not get washed. They do not need to be refrigerated.
Any eggs with skid marks get washed and refrigerated.
Any eggs that are stained, or less than perfect go in a carton for my families use.
I intend to have a 2 week or less turn around time for eggs.

Never too many questions. Also, in some states, you need a permit to sell eggs. In some states, they must be washed, and put in new cartons as well as refrigerated. My state allows recycle of clean cartons.
