Freezing eggs - now is a good time to prep for the dark days of winter

Often times, you will get a few eggs through winter, but production drops significantly if you do not keep additional lights on them. I do not have electricity at the coop, so my freezer helps me out.

Crack a dozen eggs, add a little salt, and mix together to break up the yolks and whites. Do not beat, adding a lot of air tends to decrease the storing time.

Use a muffin tin - divide evenly among them. I use the paper liners too. Freeze in pan. Remove from pan and bag and freeze. I like this because a lot of baking requires a certain number of eggs, and I can grab "two" eggs from the freezer.

However, frequently I am blessed with my family coming home, so I also just do gallon bags with a dozen or 18 eggs in it. Thaw overnight, and scrambled eggs in the morning, easy.

Some eggs tucked away now, will make your few fresh eggs go farther during the molt and winter.
