I started a batch in the incubator of mixed guinea and chicken eggs at the same time. Both show great signs of growth. What should I do when the humidity increases for the chickens to hatch though? The guinea ones need longer. Any suggestions?

IMO, in nature, humidity varies a lot. In an arid climate or during a thunderstorm and the hen can't control that but by sitting on the eggs the swings are moderated a bit.
As long as weight loss has been proper for the guinea eggs, they shouldn't be negatively affected by two or three days of high humidity.
