How do you tell Embden goose/or gander?

If, and only if, they are purebred Embdens, the females will be darker at hatching than the males. It only lasts about the first 10-14 days, then it will be impossible to tell. So after that point, they can only be vent sexed or you can wait about a year and the big ones will be males and the smaller ones female.
