Messing unnecessarily with the eggs is going to be the thing that reduces the number of baby chicks that hatch for you

Agreed, CH. On day 3 they will all be tiny. Watch your temps and don't candle again until day 7.

Honestly, if it was me with shipped eggs, I wouldn't mess with them. Set the temp and humidity and roll to day 18. Up the humidity to 60-65 and go for broke. But that's me.... And that's coming from a guy that bottle feeds baby chicks with goats milk.

OK, STUPID question - "Day 1" starts 24 hours after setting the eggs, right? (I was pretty sure the answer was yes, but then the Insecurity OCD Monster bit me...)

While I'm caught up (well, sorta - behind again since I've been typing!), I've gotta go again - off to make cheese (monterey jack - got a batch of fresh raw milk, gotta use it while it's super fresh!)
