Imagine how long he would have taken by any other method of cooking! For a young cockerel, 30 min is good. For stewing birds, I just cut up and cook in 2 cups of water for 30 min. and like you if it is not done yet, do it again! Sometimes if it is an old bird a long time in the crock pot might be easier to check on. In mile high Prescott, some things never seem to get tender unless I use the pressure cooker!I thought so too.
I did it 30 minutes at a time, about 15 minutes of natural release. He was a big boy 2&1/2 yrs half CX
