they tell me to euthanize. Don’t get me wrong, I never want an animal to suffer, but they don’t even try…for anything.

This isn't a reason to euthanize. As you know, chickens are quite adaptable. More to the point, your girl can stand on one leg which is favorable for rehabilitation.

Exactly! I brought a duck to this vet that I rescued from a pond by my house. Someone dumped it there. A lot of folks do that to their domestic male ducks. The duck had its foot bit by a snapping turtle. They told me to euthanize. I brought it home. Got antibiotics and pain meds from a local farmer. Kept the wound clean and he healed up perfectly!
