Looking for a good CHILI recipe

Texas Beer Chili
2 lbs Roast
Flour
1 Onion, chopped
1 can Beer
2 cloves Garlic, minced
28 oz can or 1 qt jar Tomatoes, diced
2 cans Pinto Beans, drained & rinsed
6 oz can Tomato Paste
3 tbsp Chili Powder
1 tsp Pepper

Cut roast into 1" cubes. Coat in flour and brown. Put all ingredients into crock pot at least 2 hrs on high or 4 hrs on low.

This chili is excellent topped with shredded cheddar cheese, and served with oyster crackers or cornbread.
 
Venison, or Lamb or stew beef Chile

1 Onion- (chopped)
1 bell pepper- (chopped)
4 clove of garlic- (chopped)
1lb-cubed venison or Lamb or stew beef
½ lb ground beef
Teaspoon rosemary
1 Tablespoon Adobo [Spanish all purpose seasoning]
4 or 5 heaping Tablespoon chili powder
2 Tablespoon paprika
1 Tablespoon cumin
1 bottle of beer 2 bottles if you like it watery
2 can “rotel’ tomato with chilies
4 cans of “Bush” chili beans.
Salt & pepper to taste
4 Tablespoon of oil

In frying pan add 3 Tablespoon of oil. Brown meat with rosemary , and then drain meat.
In frying pan add 1 Tablespoon of oil sauté Onion, bell pepper, garlic. When the onion is clear add bottle of beer. Let boil. Now add meat and all spices, stir then add rotel tomato with chilies & chili beans. Cover and let simmer on low heat or crock-pot for about 3 or 4 hours. “It’s better the next day.” And if you’re not a wimp or a child, you can sauté jalapeno peppers with the Onion, bell pepper, and garlic.


Not to blow my own horn, But! I have been making this Chile for a long time and my 5 [grown] children tell me that it is the best Chile they ever have eaten.

2 large cans light red kidney beans
2 large cans of diced tomatos with chili pepers
2 large cans of tomato sauce
1 large can of black beans drained and rinsed
2 lbs ground chuck
1 large sweet onion diced
Chili powder to taste
2 tsp sea salt
1/2 tsp fresh cracked black pepper
olive oil
1 clove fresh garlic finely minced

In a large skillet heat enough olive oil to just coat the pan. Add diced onion and garlic and stir until caramelised and lightly browned. Remove from heat and set aside.
Put ground chuck in skillet and brown well, adding onions at the last couple of minutes and stirring well. Drain on paper towel.
In stock pot add all canned ingredients and beef mixture, stirr well. Allow to simmer 30 minutes, add seasonings and simmer slow for 2 hours, taste test and adjust with more chili powder if needed.

It's simple and it's good!

Humm have several recipes depending on how much extra you want to spend on it.

Package of chili season (I use only a table spoon each time)
Ground hamburger
Bacon (fried up and reserve the bacon)
Can of Tomato like mine stewed and crushed
3/4 cup of Water if you use tomato sauce in stead of stewed tomatos
Onion
Pepper
Can of prepared chili like 15 oz size
Can of kidney beans drained
Shredded Chedder cheese for the top

Brown the bacon, fry up the onion and peppers in it to soften them. Put aside, brown up ground beef, add chili season, add tomatoes, onion peppers and can chili.

You can add or subtract the bacon, beans, onions peppers and the chedder cheese depending on budget and tastes. Hubby loves hot peppers flakes on his. Kid loves the chedder on top.

Heat it all up and then top with shredded cheddar cheese and pieces of bacon.
