I have 6 dark Brahma chicks and 3 of them started to grow in all their tail feathers a couple of days ago. The other 3 have only started now. Does quicker growth mean they could be roosters or could they be girls?

No, not necessarily. Brahmas are a slow maturing breed in general, so the feather sexing, faster vs slower feathering guidelines will not work with them.
Don't fret, just enjoy them.
