We live in Edgewater BC where the winter temps can get below -20. With a little help from my friends were building a coop. Should we insulate it? Should we maybe insulate the walls but not the roof. Any input will be appreciated. I'm of the mind that the roof should not be insulated to provide better ventilation.

You are in a VERY COLD AREA. Of course, insulate for better results. On the subject of ventilation, I suggest you read up MUCH ,,,, It is very important to do it right. There are many threads devoted to ventilation here. Remember that the larger number of chickens you are going to house in your coop, the greater the amount of ventilation needed. Remember also that proper ventilation means doing it without creating drafts. A tricky situation in some cases.
WISHING YOU BEST...
AND OF COURSE...
