slaughtered a bunch of birds today

Just want to confirm with everyone here. I made a post last week regarding my meat birds being tough. Today I did 15 birds after cleaning them I stuck them into a icy brine solution. Let them soak in tank 1 for 10 minutes then moved them to tank 2 with move ice and brine water. There they soaked for 4 hours, I then brought them into he house, vaccum sealed them and now they are in the fridge. I plan on leaving them in the fridge for two days and then freezeing them. Did I do this properly? should I have let them soak longer? I just want some nice tender birds when they hit the dinner plate.

Sounds good! I think you will be happy with that. You could have kept them in the brine for longer but 4 hours will work. Let us know how they come out. Nice job!

Sounds good- the key is not freezing or cooking them for as long as you can, so if you have the refrigerator space, that should work out great for you!
