Colour and variety are NOT different; at least not as far as the standards consider. Variety takes both physical differences such as comb type or muffs/beard presence/absence as well as plumage colour/patten into consideration.

If you go to the front of the American Standard of Perfection you will find the ASoP's definition for Variety.
Variety:
A sub-divisioin of a breed. Differentiating characteristics include plumage color, comb type or presence of beard and muff.
With Silkies a Variety would be Bearded Black or Non-Bearded Black.

The silkies listed are:
Bearded Black
Bearded White
Bearded Blue
Bearded Buff
Bearded Gray
Bearded Partridge
Non-Bearded Black
Non-Bearded White
Non-Bearded Blue
Non-Bearded Buff
Non-Bearded Gray

We have Color and we have Variety.
Two different things.
Nonbeard Silkies are a variety and accepted.
Than you have White, Black, Blue, Splash, Gray, Buff, and Partridge for color.
These colors are accepted.
Everything else is a AOV.
