It Grey bunny is a girl, I'll use her to replace one of my three white breeder bunnies.

But, umm, takes 2 bunnies to get babies. Pretty sure you know this by now.

I have a limited number of large cages. Keeping 2 males, 5 females. Rotating breeding so one pair gets bred each month, then get time to raise kits and recover before the next breeding cycle.

Peanutbunny has a solid floor nesting box - I'll be shovelling it out again and washing it thoroughly tommorow. Next set of cages will be done "differently". Learn a lot by doing and living a season with what went wrong. Almost time to make new mistakes.

Sweet rabbits, I was looking at getting some just for their deposits/plant food but quail need less space and also make eggs.
Might save you some money and be better for the bunnies if you give them a solid floor, they have to eat their pellets/droppings twice to extract all the nutrients as they only have one stomach.
They’ll use a litter tray like a cat does which makes cleaning them out easier.

They have two untreated dog ear fence pieces in each cage, gives about 11" os space on which to crap, sleep, whatever that isn't wire floor. - all the bunnies tend to make a small pile on those, while most falls thru the mesh (abd becomes fertilizer for my plants).

What age is the best for eating?

Ours we tried to do between 4 and 6 months. Older for the mini lops and harlequins to get them larger. The NZs and satin/NZs didn't need as much time so they were closer to 4 months

Is there an age when the meat gets tough and the cooking methods change, as with chickens?

I've been taking them at 8-12 weeks, brably closer to 12. Ours are NZs, Continentals, and (Peanut Bunny) is something(S) else. I actually purchased the Continental as the "runt" from a local lady with some record size bunnies, she's been breeding for years, working on truly huge Continentals.
