My husband has been canning pickles like mad! Here is the recipe:
Mitch's Dill Pickles
Makes 6 quarts!
Brine:
8 1/2 cups of water
1/2 cup pickling salt
2 1/4 cups vinegar
2 tbsp. dill seed
Add to jars:
6 or 7 four inch pickles per jar
6 to 12 dill heads
6 cloves of garlic
6 dried red chili peppers
36 black pepper corns
Bring brine to a boil. Sterlize jars. In each jar put 1 clove of garlic, 1 or 2 heads of dill, 1 dried red chili pepper, and 6 black pepper corns. Put pickles in snuggly. Fill to 1/2 inch from top of jar with brine solution. Adjust lids and caps. Waterbath can for 20 minutes.
You can use the same recipe to pickle green beans, as well.

The dill pickles are EXCELLENT and not sour or sweet. They are addicting, actually. Open a jar and it's gone in like an hour (I have 3 kids that love pickles, too).
I've got some sweet icicle pickles fermenting on the counter in my kitchen. The whole hosue is starting to smell like sweet pickles. Only 4 more days of this until I can can them.
