Leftovers and canned veggies as well as some extra seasonings…

Slow cooked for 9+ hours today while went and did exploring - unrelated time sink…

Leftovers:
A Turkey leg
Curry seasoned rice

Seasonings:
Black pepper
Cayenne pepper
Smoked paprika
“spicy stir fry blend”

Can of:
Green beans
Cream corn
Peas & carrots

About to taste test it as it been slow Cooked for 4 hours then “kept warm” for a bunch more hours today…

Taste testing it just now… a bit mild with a nice spicy warm ‘mild kick’ after swallowing it….
 
Slow cooker Beef Stew
2lbs beef, cubed into 1"
1 large onion
4 Carrots, cut into spoon sized chunks
3 Celery ribs, chopped.
1 8ox can tomato sauce
1 16oz can diced tomato
1 Large stalk broccoli, chopped.
1 can green beans or a small frozen bag.
2 cartons beef broth or 8 cups homemade beef broth.
Oil
Salt
Pepper
Optional, 5 yellow potatoes, cubed.
1.5 cups barley, quick* or pearled. Cook ahead of time.

In your slow cooker,
Brown meat In oil and salt, add onions and celery, cook those until they soften or brown.
Add carrots, tomato sauce, green beans, broccoli, bay leaf, pepper, broth and *half of the precooked barley, if using quick, all if using pearl.
Cook on medium for 6 hours, stirring every so often.
Add can of diced tomatoes and the rest of the barley*, cook for another hour.
Great with my soup Bread, made in a 13x9
Cooked at 375 for 40 minutes.

It was 80° here today and a town 30 miles from here broke records by hitting 90°! But tomorrow it will be cold enough to build a fire here, too, Penny. I might make one of Olive Garden's soups that has hamburger in it. If I can remember or find the name of it. 🤔 Their minestrone is delicious (but I don't put spinach in mine). Can find "clone" recipes for their soups on line.

Which prompts me to pull out my stockpot or Instant Pot & cook up a yummy pot of potato, beef soup or my smoked salmon & corn chowder...plus a few other family favorites! I'll start with my Smoked Salmon & Corn Chowder. I make this in my Instant Pot, but it can be made in a slow cooker or just a soup pan on the stove!

Servings: 4
Ingredients
  • 3 Tbs butter
  • 6 slices bacon, chopped
  • 4 1/2 cloves garlic minced
  • 1 1/2 small onion chopped
  • 1 1/2 cup carrots, chopped
  • 3 stalks celery chopped
  • 6 cups broth
  • 1 Tbs salt
  • 1 1/2 tsp red pepper flakes or
  • 1 1/2 tsp tapatio hot sauce
  • 1 1/2x 2 red or yukon gold potato cubed (about 2 cups)
  • 1 1/2 cup frozen or canned corn
  • 1 lb. 2 oz. smoked salmon
  • 3 cups half-and-half

Steps
    • Heat butter on Saute HI.
    • Add chopped bacon and cook to your desired crispness.
    • Add garlic, onion and celery and saute for about 3 minutes until fragrant.
    • Add broth, potatoes, corn and fish.
    • Cook on manual HI for 5 minutes.
    • 10 minutes NPR!
    • Add half-and-half and cook on saute HI until thickened.
Notes
    • I used 2c Turkey Bone Broth & 2c water in place of 4c broth.
    • Made this with my sons fresh caught and smoked Salmon! So Yummy!!!
I live in ohio. a few cities over, there was a tornado. I bought lunch from my school, and they served tomato.

Tonight I made hamburger soup, yummmm.

2# burger, browned then lightly salted.
Add 1 Tbsp. Tomato sauce, stirred into burger and heated.
1 large sweet onion, chopped and browned in same pan (remove beef into large Dutch oven)
2-3 garlic cloves, diced fine, sauteed with onions for a minute or so
2 cans chopped tomatoes
2 cans diced potatoes, drained
3 large carrots, sliced thin, zapped in microwave till tender
Two small zucchini, quartered and diced*
32 oz. beef broth

Place all ingredients into Dutch oven and bring to a boil. Reduce heat to a simmer. Add:

2 tsp salt
Black pepper to taste
1/4 tsp crushed red pepper, opt.
1/2 tsp crushed basil
1/2 tsp ground oregano
1/2 tsp thyme
1/2 tsp rosemary
2 bay leaves (remove before serving)

Simmer till zucchini is tender, about 15 minutes.
Serve and enjoy! Garnish w parsley, fresh basil, and/or Parmesan if desired.
