Guess it depends on your area.

There are amish in my area that do custom butchering.

You might look at them. Check craigslist have seen ads where people rent equipment if you wanted to do it yourself.

I had a customer that processed his birds so I asked him if he would mind bartering for some of my birds in exchange for him processing a couple of my turkey for me. It worked out nicely.
