Duck egg conversion

Following! I will have to find my old kitchen scale. I made “Brownies a la Goon 2” today. The recipe called for 1 egg, and I used 1 fresh-from-the-duck egg. My brownies came out very dense and moist. I thought that Goon 2’s little eggs were the size of jumbo chicken eggs, but I have never weighed them... Now, I am curious!
 
Really good use of duck eggs is German Pancakes! You use 6 duck eggs:1 cup flour:1 cup milk. And if you substitute the milk with protein almond milk they raise really well and make amazing protein waffles. You have the use the thicker milk though or it will not work as waffles. I’ve been using my duck eggs for 3 years now for this and I actually miss them so much over winter I make a half a dozen batches of them to freeze and pull out for easy breakfast over winter. Just thought I would share.
 
And for any boxed mix cake or brownie always do a 1:1 duck to chicken egg. I promise it’s amazing. I did a three layer chocolate cake with whipped cream blueberry filling and lemon buttercream for my daughters first birthday and it was the best cake I have ever eaten. And everyone else said the same. So yummy!!
 
This is my small Pekin duck egg compared to my huge barred rock egg— so yes, I use one duck egg instead of two chicken eggs.

I'm going to start freezing them this summer so I'll have plenty for the holidays! Great idea. Do you scramble them up and freeze or just one at a time in little cups?

I don’t freeze the duck eggs I freeze the cooked waffles. I found that when you freeze the duck eggs they get a weird texture because freezing pulls out liquids. The yolks defrosted to a cream texture and the whites were way weird.

Yuck, ok, maybe I'll just hope the gang keeps laying for the holidays!
 
I set a glass measuring cup on a scale set to grams and crack my ducks' eggs into the measuring cup until the weight is close to equaling the right number of large chicken eggs, which I figure as 57 grams each.
