Eggs...what to do??

Hi,
I got ducks for the "cute factor" and for garden pest control. I have 1 hen who lays 6 egg a week like clockwork.At first all eggs went in the incubator but now what. I am not sure how to use the eggs. We tried frying and scrambled but the texture didn't go over well. I would love to hear your favorite duck egg recipes.

Use them to bake. Yummy in gelato, ice cream, and pretty much all baked goods.
I don't like egg yolks much to begin with, so if I'm scrambling eggs, I use a chicken egg and then add a few duck whites.

They are AMAZING for baking! They have more protein than chicken eggs and for some reason that gives baked goods a richer flavor and consistency.
