Have 40 lbs turkey. How do I cook this thing?

I would split it in half and put it in 2 roasting pans, pour in some white wine on the bottom... maybe some chopped up apples, onions, rosemary & thyme. Cover in tin foil and cook according to weight. In the last 1 hr to 45 minutes remove the foil top to brown!

I bet that beast will be super juicy!!!!

I'm overcome with a 21 lb bird!

No! Absolutely do not cut it in half, cook it for 10 hours, or anything else like that. I swear to you, BBQ it on a weber for 2 and a half hours. Do it indirect heat with wood chips and charcoal and you will never put a turkey in the oven again. We do this every year with store bought birds (only takes about 2 hours with those little guys) this year we raised our own and he was at least 35 pounds and it took 2 and half hours and was even almost overdone on the outside. We raised 2 and we're doing our second one this week for Thanksgiving. But seriously. I swear to you, BBQ it on a simple black dome weber BBQ.
