Recently someone posted a comment about how great brussels sprouts are in scrambled eggs. Tried it this morning and have to agree, they really do compliment one another. Who da thunk? Who ever you are thank you.
 
Glad you asked.

Chop up a handful of brussels sprouts with a clove of garlic and a healthy grating of fresh nutmeg.

Sautee it all in coconut oil for a couple of minutes.

Added a little cooking sherry at the end. Slap a lid on the pan and set aside.

Prepare scrambled eggs the way you like.

Place brussels sprouts on plate, top with scrambled eggs.

I am sure there are a million things you can do with this recipe. This one was quick and simple.

Never tried them with eggs, but try steaming them until tender, then add melted butter, honey, garlic salt, and dill weed! Play around with the amount until you like it. MMMMmmmm!!!!!!!!
 
Sounds like a mashup I'd enjoy.

I prefer my sprouts oven-roasted until they are crispy & browned with just a drizzle of olive oil, S&P & perhaps a few red pepper flakes.

I do cauliflower the same way & I bet that would be good with the eggs too.
 
I like them roasted too, but my mom recently served us a dish where she shredded them and then sauteed in butter and garlic. They were fabulous, and I bet they'd be good with eggs too!
