I have a friend with a Little Giant and apparently the fan causes the incubator to overheat after the thermostat has cut off the heat. Does anyone have any idea how to solve this problem?

I really don't see how the fan can cause the unit to "overheat". All the fan does is circulate the air inside, no matter what the temp is. If it's overheating, the thermostat is to blame for that.........it's the "pilot" for the heating element, and makes the heating element heat up and go off depending on the setting you have it at.
Hi! Is the temperature in the room where the incubator is staying between 62 and 75 degrees?
The fan motor puts off a little heat and if there is a turner, the turner motor puts off heat as well.
But it could be the thermostat or element going out.
Good luck figuring it out!
