Mealworm farming

Scratch is not a complete feed and your chickens will eventually have health problems. There are certain vitamins,minerals and other substances that are in a complete chicken feed, Scratch is only for treats.
 
I got my first beetle sometime today, and now they just keep coming. Of course not when I'm watching with my camera to catch a video for my daughter to show her class

I am noticing that all pages that give instructions for mealworm farming always use a dry food as the base, and then introduce a wet vegetable food on top of the bed. Wheat germ or oats are typical bedding material. What is the reason for the dry layer at the bottom? Is this about absorbing excess moisture that travels downward?

How often should the bedding be cleaned out and replaced, regardless of whether it has all been eaten?
