Oil dripping from bird

Hi! This is my first time processing chickens and last night I processed four brahmas. I have 11 Cornish cross to do today. when I processed the first one and was doing the gutting everything was fine. But when I did the last three there was oil quite literally dripping out of the bird when I was gutting it. The first time this happened I thought maybe that’s the oil gland so I was extra careful with the next two to cut it off with the tail just like all the videos show and it still happened. It wasn’t just a little bit of oil it was like someone had dumped olive oil all over the inside of the chicken. Does anyone have any guesses as to what this is? And also I rinsed the birds off and still froze them, are they still edible? If this is the oil gland why when I cut the tail off and thought I cut the oil gland off was it coming from the intestinal area? I attached an image because it said I had to before I posted this
