Question about fodder

So I decided to try fodder and so far my barley is doing fabulous. However, I have a question on the wheat.

1. I got a trial pack of wheat but there were different kinds. I think I got red wheat. Is this good or is there a better one?

2. As early as day 2 some of the wheat was showing some dark spots. Is this mold? I'm doing the exact same thing w the barley and that doesn't show anything that would make me think mold.
