Taste of Duck Eggs

Love duck eggs here-- at any of the parties I bring baked goods to, well you wont hear complaints! Hard & soft boiled, yum. Fried: Not at all popular. I collect daily and my eggs go straight to the fridge. They won't last a month, but that is as long as I'd keep them. Other people do things differently, so taking polls and then deciding what is best for you is a great way to go. But personally I say 30 days, and I believe that when you purchase chicken eggs at the grocery, the date stamped on the carton is 30 days out from date of collection/packaging. Altho... I know that I've cracked open grocery eggs and they just look old.
 
i have KC ducks, feed DUMOR also. only other is cracked corn. they have a strong flavor i do not like. i really think no one would like them. the eggs smell unpleasant also. they have no access to anything fishy. everyone posts they love their duck eggs and many say they taste close to chicken eggs. what's wrong with mine? would appreciate any replies
I am pretty sure its the Dumor feed, people say it makes their poop really stink so I am guessing it may be why your eggs are so strong
 
I eat my pekin ducks eggs! I don't find them rubbery, but they do have a different texture with a big, thick yoke. Ever since my duck started laying I haven't wanted chicken eggs. I bake quiche with them but my favorite is soft-boiled!

Okay, so one vote for Pekin so far.

And I have no access to quail, but we are about to hatch out 12 guinea eggs. Has anyone tasted guinea eggs? (I mean after I raise these and they start laying, of course.)
 
I think what they are eating makes more of a difference than what breed they are. If their food contains fish meal, they might taste fishy, etc.

Duck eggs taste a little richer than chicken eggs and I've heard they need to be cooked more gently to avoid the rubbery effect (lower heat, shorter cooking time). I use mine for baking.

Just to warn you, some people who react to chicken eggs can't eat duck eggs either.
 
I eat my Cayuga eggs. They don't taste any different then a chicken egg to me honestly. My Cayuga girls lay about 5-6 eggs a week, each. One duck hen kept our fridge stocked with eggs while I hatched all of the chicken eggs I had. We don't eat an over abundance of eggs though.

I have never had them deviled... made just about everything else with them.
 
I've heard that some people who are allergic to chicken eggs can eat duck eggs with no problem. You can google it.

As for egg production... Khaki Campbells are one of the best layers and Indian Runners are a close second. Khakis aren't really a "pretty" breed. Runners are... Comical. Lol. You just can't look at them and not smile.

I'm going to eat my duck eggs when they start laying so I'm excited to see how they taste too! I've heard only good things. There's a thread about duck egg recipes on BYC. Maybe you could search for it. I don't know how to post the link here. Sorry.
