Hey @rjohns39 you're a good cook...do you make omelettes? I cannot for the life of me figure out how to make them, they turn out like scrambled eggs. Any pointers, anyone?
I'm not a good cook but I can do omelettes.
Whisk the eggs well is part of it. I use a fork. Let the mixture stand for a few minutes.
I find butter in the pan is best to stop the eggs sticking. Make sure the butter melts around the edges of the pan.
I cook on a low heat. Cook to fast and the base burns while the middle stays runny.
As soon as the mixture looks like its solidifying around the edges, use a wooden spatula to gently free the edges from the pan working your way around the pan.
Wait a couple of minutes more and work the spatula around the edges again and into the middle making sure the whole mixture slides freely in the pan.
Depending on what's in the mixture dictates whether I flip the omellette over or not. If the mixture is free from the pan you can flip it like a pancake.

How many times did you miss the pan during a flip and the chickens cleaned up the mess?
