Not sure if this would also classify Xmas song but I LOVE Ave Maria.....by various artists such as Placido Domingo, Luciano Pavarotti, Jessye Norman, Kathleen Battle, Kiri Te Kewana.

For pop, I love John Denver and the Muppets Xmas shows! They are a riot when they all sing 12 Days of Xmas!

Wow you guys I know none of those except Ava Maria but my favorite is much more mundane, "last Christmas" by George Michaels, and it has a recent remake with a girl singing it but I like ol' George better!
 
I love Celine Dion's rendition of Ave Maria. She sings like an angel. My favorite Christmas song.
