Crests in ducks result from having a single copy of a dominant gene. Having two copies of the gene results in death of the embryo before hatching. Breeders of crested ducks use one crested parent and one non-crested parent, and statistically get 50% crested and 50% non-crested offspring. As long as one of the parents is non-crested, you won't have any problems with the crested gene.
